ACLM defines optimal nutrition as a dietary pattern with two key elements: (1) centered on a wide variety of whole and minimally processed plant foods including vegetables, fruits, whole grains, legumes, nuts, and seeds, and (2) minimizes red and processed meats, foods high in saturated fat, and ultra-processed foods containing added sugars and fats/oils, refined carbohydrates, and excess sodium.
